Perfect Boiled Eggs & Making Them Devilish


I've decided to start posting about kitchen basics here and there on Honeyed Hashette. There are so many basic kitchen tasks that many people just don't know how to do.

Take hard boiling eggs. How many times have you gone through the motions of what you thought was the right process, only to end up with hard boiled eggs that have an unsightly green ring around their yolks or that are really more soft boiled than anything? These are common whoopsy daisies in the world of hard boiled eggs and I am going to teach you a fail safe way to get them right every time. It's easy.

Simply follow these 10 easy steps:
Step 1: Place your eggs in a sauce pan large enough to hold the eggs on one level. No eggs on top of eggs allowed. Only side by side PG rated "this is your dance space" egginess should be going on in your pan.
Step 2: Fill your sauce pan with water so that the water is just covering your eggs.
Step 3: Turn your burner to medium high heat and place your eggs over the heat. Bring your eggs to a nice rolling boil.
Step 4: Boil your eggs for TWO minutes.

Step 5: Turn your heat off.

Step 6: Set your timer for 10 minutes and let your eggs sit in the hot water until the timer goes off.
Step 7: While your eggs are sitting, make an ice bath by placing 3-4 cups of ice in a bowl of water.

Step 8: When your timer goes off, spoon your eggs out of the sauce pan and into the ice bath.
Step 9: Set your timer for 10 more minutes and let your eggs sit in the ice bath until the timer goes off.
Step 10: Remove eggs and remove shells. Voila!

The Incredible Devilable Egg.

These delightful delectable delicate little darlings are a favorite in my family and Derrick's. They are usually reserved for holidays, but I WANTED them on Sunday, so I made 6 instead of the normal 2 (ahem...or 3 if you count last Christmas) dozen. These always taste like Thanksgiving, Christmas and Easter all wrapped into a little eggy mouthful. I twotally heart vem phrough and phrough (said with a mouth filled with egg).

Deviled Eggs
Ingredients:
6 eggs, hard boiled
1/2 cup miracle whip
1/4 cup mustard
salt to taste
paprika or other desired topping

Directions:
Carefully half your hard boiled eggs. You want perfect little bouncy egg whites.
Place the yolks into a bowl.
Using a fork, mash the yolks.
Add miracle whip, mustard and salt.
Whip all the ingredients together. You may have to add a little more of any of the above ingredients to achieve your desired flavor.
Spoon or pipe the filling into the empty egg halves.
Sprinkle with paprika or top with capers, minced dill, chopped dill pill, smoked salmon and creme fraiche, or anything you like.
Chill for 30 minutes before serving.

Thanks for the reminder about deviled eggs. I never think to make them but they are definitely a fave. I could eat far too many in one sitting though.

I know there are a lot of varieties for how to make them, top them etc. I prefer mine pretty plain- w/ mayo, not miracle whip- and a little sprinkle of paprika!

deviled eggs are awesome...!! everyone always asks for them. i love your method of boilng, mine are typically overboiled, but the good thing about overboiled is you can still devil them and no one knows the diff!! underboiled, yeah not so much.

I've never made deviled eggs but my hubby loves them! I think I might make a few for Thanksgiving, thanks for posting this! It definitely makes the thought of making them less intimidating :D.

recipe girl- my great grandmother, grandmother, mother, mother in law, and aunt all use miracle whip so that is the way my hubby and I prefer them, but I think most people make them with plain mayo...

nina- I often see these at showers and events with a little dash of fresh dill. They really are so yummy. :)

mara- that boiling method really is fool proof. I do agree on the over boiling. The worst is when they're under boiled. Not much you can do there. :) How have you been? You have been quiet lately.

grace- yes, I agree. they just aren't the same without paprika. :)

sophie- Definitely make your hubby some. The good thing is you can make as many or as few as you like.

Your Aunt Andi makes hers with yellow mustard and no mayo at all...gives them a little kick that is so good. Years ago whenever there would be a covered dish carry-in where I worked, I would always bring deviled eggs. Everyone always loved them but one time someone asked "is that the only thing you know how to make?" I still laugh about that remark.
