Last weekend, Texas Tech and UT played an amazing game. Derrick graduated from Texas Tech and worked there for several years. The Red Raiders are dear to our hearts and they did not disappoint. Our Red Raiders pulled through and beat those longhorns for one of the best football games I have seen yet. Our friends Joe and Amy had a game watching party at their house and we brought a very special cake.
I used the red velvet cupcake recipe on the side bar. I know the cake isn't in the shape of a longhorn, but it should take you back to Steel Magnolias and the armadillo groom's cake. "People are going to be hackin' into this poor animal and it'll look like its bleedin' to death."
I topped the cake with a defeated longhorn and decorated the sides of the cake with all the names of the kids at the party. Joe and Amy's oldest son Preston loves sugary fondant and when he found out I was making a cake he asked if it would have "sugar letters" on it. Well, with about 10 kids attending the party, I couldn't leave them out so everyone's name was on the cake.
The fondant names were a big hit and all the kids wanted the slice with their name on it. Can't beat that! The cake was just as good in cake form as it was in cupcake form even though I thought I burned it...I just sliced the top off and it was just dandy.

Though I am not a fan of either team I did watch the last quater of that game. WHAT A GAME! (Can't believe that guy caught the ball and stayed inbound. His momentum should have taken him out.)Glad it was your team that pulled through.
