Lemony Chicken


Baby Clara is here! We welcomed our little girl on December 8th and we have enjoyed every second with her. Being a parent is amazing! I love her more than food! We do call her muffin though.

Now that we are settled, into a routine and getting sleep (somewhat) again, I have been cooking dinner and making lunches. I am still home on maternity leave and am making the most of this mommy at home business.

I am a big fan of The Pioneer Woman and found this yummy recipe on Tasty Kitchen (which you can find through her blog or by clicking here). Derrick loved this because it was yummy and I loved it because it was easy and called for simple most likely in your fridge ingredients. The lemoniness is subtle which was a nice compliment to the crispy salty flavor of the chicken. I will definitely make this again, but next time I will add a little lemon zest to the sauce. I paired it with oven roasted potatoes and a light Asian salad. Mmm Mmm good!

I hope all of my blogging friends are doing well. I am going to do my best to post again now that I am no longer pregnant. My goal, starting in February is to post at least once a week, but hopefully twice a week. We shall see!

CB- Hi Dear! You know I don't think I ever knew your real name! I never knew a Clara before but you are definitely cheerful and happy and beautiful so that's great for a namesake, right? :) We lived in San Jose, CA for 2 years (Santa Clara County) and named her after that Clara because we loved that time in our life so much. :)

Hailey- you'll be in my boat soon enough! Eventually I was so uncomfortable I couldn't think about cooking, much less blogging about it. It sounds like you are feeling pretty good though and I am so glad the cookie recipes worked out for you. I do think you need to post some bump shots though. :) Oh- and the bedding looks smashing!

Nina- HELLO! Thank you. :) We think she's pretty great! She is growing like a weed. Apparently I am not to bad at whipping up her "food" either. She is only 8 weeks old and weighs about 14 lbs. Chunky monkey. :)
